Sweet Potato Caserole DR styleTry this tasty recipe at the weekend, using foods that are available in your home country and of course found here in the Dominican Republic.  It’s easy, fun and you’ll find that your family will come back for second helpings! Sweet potatoes are grown in the Dom Rep and are used in a variety of ways but this is one of our favorites so give it a go...

Caramelized Sweet Potatoes

You will need:
4 Medium Sweet Potatoes peeled and diced
2 Cups of Water
¼ Teaspoon of Salt
3 Tablespoons of Soft Butter or Margarine
3 Tablespoons of Brown Sugar
2 Cups of Orange Juice
2 tablespoons of Cornstarch which you have mixed/dissolved in a bit of cold water
½ Cups of Raisons
1 Teaspoon of Cinnamon

Method:
Lightly grease a casserole dish approx 20cm x 20cm x 5cm
Pre heat your oven to 350F or 180C
Boil your diced and peeled sweet potatoes for about 5 minutes, drain them and set aside
Melt butter/margarine, add the brown sugar, orange juice, salt, cornstarch mixture and mix together
Simply put the sweet potatoes in the casserole dish and pour the liquid mixture on top
Sprinkle on the raisons
Sprinkle on the cinnamon
Now just simply bake uncovered until syrup is formed and the sweet potatoes are nice and soft! Delicious!!

This is a great side dish served with turkey or baked ham or as a nice vegetarian treat with a green salad! In the Dom Rep we love it with pork chops or fillet of pork as a Sunday family get together…
