Christmas in the Dominican RepublicHere is a fantastic recipe to try out at home especially if you have been to the Dominican Republic on vacation and taken home with you some of the delicious cocoa chocolate powder which is organically grown here.  The cocoa industry is big business in the Dominican Republic with much of it being exported to fine chocolate makers through out the world. Also ginger is grown nationwide in the Dominican Republic and fresh ginger root is available in all supermarkets.

Using rich brown sugar and molasses from the tropical sugar cane fields this is a great island recipe for you to try at home. So check out our delicious recipe for Cocoa & Gingerbread Brownies…  

Ingredients for Cocoa & Gingerbread Brownies

1 & ¾ cups  of all purpose flour
¾ cups  sugar
¾ cups  dark brown sugar
2 teaspoons ground ginger or for more bite freshly grated root ginger
¼ cups  cocoa powder (better if it’s from the DR)
1 ½ teaspoons cinnamon
¼ teaspoon ground clove
1 teaspoon  salt
½ cup  molasses
12 teaspoons unsalted butter (melt and cool for recipe)
1 large  egg
¼ cup  whole milk
1 large  egg yolk
8 ounces semi sweet chocolate (roughly chopped)
1 ½ teaspoons baking soda
¼ cup  boiling water

Method for Cocoa & Gingerbread Brownies

1. Preheat Oven to 325 degrees F.

2. Grease a 9 by 13 inch baking dish and set to side. Then sieve all of the dry ingredients together into a large mixing bowl.

3. Mix and combine the butter, molasses, egg, milk and egg yolk in a separate mixing bowl. Once mixed add this lot to the dry flour mixture and stir it up!

4. In a small bowl mix the boiling water with the baking soda. Add the water mixture to the brownie batter and stir to combine it, then stir in your chocolate chunks.

5. Have a quick rum and coke after all that mixing!

6. Pour the brownie batter into the greased baking dish and pop in the oven for about 40 minutes. You can check if your brownies are cooked by inserting a toothpick into the center and see if it comes out clean.

7. Wait for your brownies to cool then dust lightly with cocoa powder. Slice into rectangle brownie shapes and eat!
