Just bring Canadian dollars. The exchange rate here at the moment is around 33 pesos to 1 U.S. and 28 pesos to 1 Canadian. So if you change your Canadian dollars in Canada to American, it's not worth it in the long run. Haven't been to Canada for a while so don't really know what the exchange is from Cdn to US but with only a few points difference here would think it's best to just bring your Cdn.
Re the whales, definitely recommend Kim at Whales Samana, she's Canadian and started the whale watching in Samana many years ago. The website is www.whalesamana.com You can book directly with her office when you arrive or can also book in advance through her site. Have been out with her many times and it is the best trip to go on. Very professional.
